Cucumbers are high in water content and act as a cleanser in the body. Garlic and ginger support a healthy cardiovascular system while, mint promotes digestion. Cayenne pepper improves weak circulation and strengthens digestion.  Apple cider vinegar contains malic acid which is very helpful in fighting fungal and bacterial infections.

Inner Light Cucumber Mint Dressing

Preparation Time:  15 minutes /  Serving:  2 ¾ cups

  • 1 medium Cucumber, peeled, seeded & chopped (1 ¼ C)
  • 1 C Filtered water or coconut water
  • ¼ C Cashews or macadamia nuts
  • 2 Tbl Lemon juice, fresh squeezed
  • 2 tsp Apple cider vinegar, raw
  • 2 tsp Mint leaf, minced
  • ½ tsp Nama shoyu, or to taste
  • ½ tsp Ginger, peeled & minced
  • ½ tsp Garlic, minced (optional)
  • Pinch Cayenne pepper
  • Sea salt, to taste
  • Black pepper, ground to taste

Loving Preparation

1. Place all ingredients in a blender and blend until creamy.

Variations

 Try replacing mint with other fresh herbs.

 Replace cashews with other soaked nuts or seeds.
